I have made this recipe over hmmmmmm…. 10 times. It is addictive! Here is the recipe:
Pasta Salad
Makes 12-18 servings
16 ounces of penne
1/2 cup of mayonnaise
1/4 cup of whole milk
2-3 tablespoons of white vinegar
2-3 teaspoons of adobo sauce (from canned chipotle peppers)
1/2 teaspoon of salt, more to taste
Black pepper
3 cups of red and yellow tomatoes, halved
1 pound of smoked Gouda cheese, cubed
24 basil leaves, shredded
Cook the pasta in a pot of salted boiling water, and cook until al dente. Set it aside, and drain with cold water.
Combine the mayonnaise with the milk in a medium bowl. Then add 2 tablespoons of the vinegar and stir until smooth. Add 2 teaspoons of the adobo sauce, or more if you like it spicy. Add the salt and pepper. Stir the dressing until combined.
Drizzle the dressing over the pasta, add the tomatoes, the gouda, and stir the pasta around.
Add the basil and stir until combined.
Cover with plastic wrap, and chill for at least 2 hours. Enjoy!!
