Fig Prosciutto Pizza

I love pizza sooooo much! I know that my parents aren't big fans of it, but I made a grown up pizza that is delicious! Here is the recipe:

Fig Prosciutto Pizza
Serves 8-10

Pizza Dough:

1 scant teaspoon of active dry yeast
3/4 cup of water
2 cups of all purpose flour
3/4 teaspoon of kosher salt
3 tablespoons of olive oil

Pizza:

1/2 cup of fig spread, or fig preserves
Kosher salt
12 ounces of fresh mozzarella, thinly sliced
8 ounces of prosciutto, thinly sliced
12 ounces of arugula
Shaved parmesan cheese (optional)

Pizza Dough:

Combine the yeast, and the warm water in a small bowl. Allow it to sit for 10 minutes.
Add the flour to the bowl of an electric mixer fitted with a paddle attachment, sprinkle in the salt.
Turn the mixer on low, then slowly pour in the olive oil. Finally, pour in the yeast/water mixture.
Stop mixing when everything comes together. Transfer to a lightly oiled bowl and cover with plastic wrap. Allow the dough to rise 1 hour before using it.

Pizza:

Preheat the oven to 500 degrees, and arrange the oven rack as low as it will go.
Roll out the pizza dough as thin as possible. Pour on the fig spread. Spread it thinly over the surface of the dough. Sprinkle it lightly with kosher salt. Layer the mozzarella slices all over the top of the fig spread. Bake for 12-15 minutes, until the crust is golden brown, and the cheese is melted and bubbly.
Drape the prosciutto slices over the hot pizza.
Pile on the arugula, as high as you want.
Then sprinkle on the parmesan shavings, if you like, but who wouldn't.
Cut into squares, and serve! Delicious!
