California Veggie Sandwiches

So, I was looking for a great vegetarian sandwich recipe, and I think I succeeded… Here is the recipe:

California Veggie Sandwiches
Serves 4

8 ounces of fresh goat cheese
1/4 cup of chopped fresh flat leaf parsley
8 slices of multi grain, toasted
2 kirby cucumbers, peeled, and sliced
8 slices of mozzarella
8 slices of tomatoes
2 carrots, peeled
1/2 red onion, thinly sliced
2 radishes, trimmed and cut into matchsticks
Salt and pepper
Olive oil, for drizzling

Mix the goat cheese and parsley in a small bowl. Spread the bread slices with the goat cheese mixture. Layer 4 slices of bread with tomato, mozzarella, red onion, and drizzle with olive oil. On the other four slices, put the cucumbers, carrots, radishes, remaining mozzarella, and drizzle with olive oil.

An easy dinner that is delicious!
