Breakfast Burritos
Makes 12 burritos
Potatoes:
4-5 red or other potatoes
1 large onion, cut into large, rough dice
Vegetable oil, for frying
Bacon Fat (optional)
Salt and pepper
Burritos:
1 pound of ground beef or sausage
Potatoes^^
2 red bell peppers, or green bell peppers, seeded and roughly chopped
10 eggs
1 teaspoon of seasoned salt, such as Lawry's
Black pepper, to taste
1/4 cup of half and half
2 tablespoons of chopped fresh chives
2 cups of grated Cheddar cheese
12 flour tortillas
Hot sauce, for serving
For the potatoes:
Place the potatoes on a baking sheet and bake in a 375 degree oven for 45 minutes, or until fork tender. Place the hot potatoes on a cutting board, and dice them into 1 inch pieces.
Heat a skillet over low to medium heat. Put about a tablespoon of the vegetable oil in the pan. Add the bacon fat to the skillet.
Add the onions, and sauté them until they start to turn brown.
Next, throw in the baked potatoes, and season with salt and pepper.
Cook without stirring them.
After several minutes, use a spatula to flip the potatoes over to the other side. Season with salt and pepper.
For the burritos:
Brown the ground beef, and drain off the fat.
Add the potatoes, and the red bell peppers. Cook over low heat for 5 minutes.
Crack the eggs in a bowl, add the seasoned salt, and the pepper. Add the half and half. You can sprinkle in some cayenne pepper, or dry mustard if you want to.
Add the chives, and the cheddar to the eggs, and whisk.
With the heat still on, pour the egg mixture over the potato mixture.
Now, with a spoon or spatula, very gently stir the mixture.
Don't stir to much or else the potatoes will break apart.
Continue cooking the eggs over low heat until set.
Taste and adjust the seasonings.
To assemble:
Warm the stack of tortillas on a paper towel in the microwave for about 30 seconds. Place a heaping spoonful of the egg mixture onto the middle of the tortilla. Go ahead and sprinkle some cheese on top.
Fold the burrito, and serve with plenty of hot sauce!
