Dad's Birthday First Course: Pancakes

Who doesn't like pancakes in the morning… nobody! But what about sour cream pancakes? Here is the recipe:

Sour Cream Pancakes
Makes about 12 - 4inch pancakes

1 cup of sour cream
7 tablespoons of all purpose flour
1 tablespoon of sugar
1 teaspoon of baking soda
1/2 teaspoon of salt
2 large eggs
1/2 teaspoon of vanilla extract
Butter
Maple Syrup

Place and iron skillet, or a griddle over medium low heat. Get it nice and hot.
Place the sour cream in a medium bowl, dump in the flour, sugar, baking soda, anne salt.
Stir it together very gently, but don't stir it all the way, leave some clumps to have an interesting texture in the pancakes.
Whisk the eggs in a separate bowl, add the vanilla, and stir to combine.
Pour the egg mixture into the sour cream mixture.
Stir together gently, and don't worry about stirring it completely.
Melt about 1 tablespoon of butter in the skillet.
Pour the batter into the skillet 1/4 cup at a time.
Cook for 1 to 1 1/2 minutes, then flip them over. Cook for another 45seconds, and remove to a plate.
Repeat with the remaining batter.
Stack the pancakes sky high, and top with butter, and syrup. DELICIOUS!
