Pasta with garlic sauce

If you are looking for a recipe that is light and bright, this is definitely your kind of recipe. Here it is:

Spaghetti with Garlic and Herbs
Serves 2-3 people

8oz spaghetti
Salt and pepper
1 tablespoon olive oil plus more for drizzling
6 peperoncini rings, or any spicy pepper, sliced into rings
6-8 garlic cloves, minced (I know that sounds like a lot but its goooooood)
3/4 cup of chopped parsley and basil combined
1/2 cup of parmesan plus more for topping

Cook pasta as the packaging says and salt the water, and bring to a boil until al dente. You can add olive oil if you prefer.
Before pasta is finished cooking, heat the olive oil in a large skillet over medium heat. Add the peperoncini, and half the garlic; toss and cook until heated through (1-2 min)
Reserve 1/2 cup of the pasta water. Add the pasta to the skillet and stir and toss to combine. Add the herbs, the parsley and basil, and the remaining minced garlic. Add the pasta water until the consistency to which you like it. Toss it. Next, stir in the cheese until melted. Season with salt and pepper. Plate and drizzle on some more olive oil and some more parmesan, if desired. Serve and enjoy!

I recommend having a salad with this, or serve with bread.
