Crab Salad



Crab Salad


We had some leftover lump crabmeat from the other day.  It was about a 1/2 pound.  So, I decided to make my father a cold crab salad for lunch.  It was easy and the variations you can come up with are endless.  What I did was put the crab in a bowl, added 1/2 cup of mayonnaise, one diced shallot, about 1 teaspoon of minced fresh tarragon, 1 Tablespoon of chives, 1 Table spoon of fresh lemon juice. Fresh cracked black pepper and a dash of cayenne pepper.  Mix and serve!  This could be good on a tomato or on top of a salad.  Heated up and served on crackers.  Also, you can add a teaspoon of Dijon Mustard or horseradish of you wished.  This was easy and tasty!  We like easy and tasty during the week!
