Seafood Asparagus Salad

Aspragus Seafood Salad-
This is a simple recipe to enjoy asparagus season.  You blanche the asparagus quickly with some sliced onions.  Then put them in ice water. Cool and dry them.  Then to the same water, add shrimp for one minute and scallops for 3 minutes.  Drain and cool them too.  Also clean and drain crabmeat.  Then I made a rice wine, lemon/honey vinaigrette with shallots. You them put some fresh salad into a bowl and lightly dress with the vinaigrette.  Plate it.  Then put the asparagus, shrimp, scallops and crabmeat in the bowl and toss to coat with the vinaigrette and plate. Enjoy!  This is a meal in itself and nice to eat on a hot day. So, keep this in mind as the weather gets warmer.
