Mother's Day Menu
Pecan and Banana Parfait
This was the first course for our Mother's Day Breakfast. It is really easy, elegant and delicious!
Serves 4
Ingredients:
3/4 Cup of Chopped Pecans
1/2 cup of Maple Syrup (every house should always have maple syrup!)
1&3/4 cup of greek yogurt
1 teaspoon of pure vanilla extract
1 teaspoon of ground cinnamon
2 Tablespoons of confectioners sugar
4 ripe but firm bananas
2 teaspoons of lemon juice
2 teaspoons of demerara or raw sugar
Put the pecans and maple syrup in a small saucepan over low heat and cook until the syrup bubbles.
Remove from heat and stir in the oats. Then transfer onto a non stick baking sheet and place in a pre heated 325 degree preheated oven for 10 minutes, or until the oats are toasted and sticky. This is kind of a chewy/crunchy granola.
In a medium sized bowl, mix the yogurt, vanilla, cinnamon and confectioners sugar and set aside. The slice the bananas and toss with the lemons juice and the demerara sugar and set aside. *Save a few pieces of banana for decoration.
Divide the half the yogurt among 4 glass bowls or parfait glasses (as pictured above). Then top of bananas, then half the nut mixture. Repeat layers and finish with the nut mixture as the last layer. Then decorate with the reserved banana slices and chill until ready to serve.
Once you make this, you can think of many other ways to make this dish. Maybe with peaches, or strawberries, apples or any ripe seasonal fruit! Enjoy!
