Salad with Naan

For the next course, I made a wonderful vegetarian salad. It was my first time making it, all I can say is SCRUMPTIOUS! Here is the recipe:

2 pieces of pita or naan toasted and ripped into pieces
2 tablespoons of olive oil plus more for serving
Salt and pepper
2 cans of red kidney beans drained and rinsed
1/2 a cucumber
1 shallot, diced
1/2 cup chopped parsley
1 6 oz mesclun lettuce, or romaine
1 tablespoon of fresh lemon juice
2 tablespoons crumbled feta



Toast the naan or pita under a 375 degree toaster or on a grill. Toss all the ingredients in a bowl and serve.
