Migas

Mother's Day Main Course
Migas!

If you like breakfast burritos, then this is a dish you will enjoy!  There is nothing like lots of fresh flavors in the morning to wake you up!  This morning we made this for my Mom and our wonderful neighbor Alex since they are two terrific mothers.

This recipe makes six servings

Ingredients:
1 medium Onion chopped
1 red bell pepper- seeded and diced
1 green bell pepper- seeded and diced
4 tomatoes- chopped
1 or two jalapeños- chopped
10-12 large eggs
1/2 cup of half and half
salt and pepper to taste (freshed cracked pepper only!!)
4 corn tortillas
canola oil for frying
1 Tablespoon of olive oil
1 Tablespoon of butter
2 cups of grated mexican Cotija, monterey jack or cheddar cheese
1/4 to 1/2 cup of cilantro (depending on your taste)
1/4 cup of sour cream.

First chop all your vegetables. Put the onions and bell peppers in their own bowl.
In a large bowl, beat the eggs and the half and half and add the salt and pepper and set the bowl aside.
Then in a small skilled add enough canola oil to fill the bottom of the pan and fry the tortillas one at a time till they brown.  Drain them on paper towel. Let then cool.  Cut into cubes and set them aside.
Then heat up a large skillet and add the olive oil and butter and melt heat up until the bubbles go away. 
Then add onions and bell peppers and cook until they soften and caramelize a little bit.
Now toss in the tomatoes and heat them up for about one minute.
Add the tortilla pieces and the jalapeños and reduce the heat to low.
When the skillet has cooled a little bit, then add the egg mixture.
Cook the eggs slowly and gently fold with a spatula.  Treat this dish with care!! Be gentle!
Then when they eggs are cooked to your liking, toss in the cheese and cilantro.  This is a good time to taste and see how the salt and pepper is and adjust as needed.
Now you can plate the dish and top with a dollop of sour cream and chives or cilantro.  I do not really like cilantro, so I added chives.
