Zucchini Patties in Pita Bread

My mom wanted to make a vegetarian week, so I decided to make these wonderful zucchini fritters that just about anybody will love, whether it is a meat lover, or a vegetarian, these are sure to impress. Here is the recipe:

Zucchini Patties in Pita Bread
Serves 8

1 1/2 cups of cooked chickpeas
1 cup of fresh plain breadcrumbs
1 medium zucchini, grated
1 small red onion, grated, or finely chopped
1 large egg, whisked
1 teaspoon of coarse salt
1/4 cup of olive oil
4 pita breads, toasted
1 cup of plain Greek - style yogurt
8 leaves of lettuce
Tomatoes, feta, cucumber

Mash the chickpeas in a bowl until smooth. Stir in the breadcrumbs, zucchini, onion, egg, and salt. Form into eight 1/2 inch thick patties.

Heat the olive oil in a large skillet over medium high heat. Saute patties until golden and crisp, 2-3 minutes per side.

To serve, halve the pitas, and stuff with the patties, the yogurt, and all the fix ins.

I recommend serving this with a salad. Enjoy!
