Singapore Noodles

I love noodles, and how they can be sweet, savory, sour, bitter, spicy, or salty. They can go so many different ways. I specifically love spicy noodles. Here is a great singapore noodle recipe, that is sure to impress. Here is the recipe:

Singapore Noodles
Serves 6

10 ounces of dried somen noodles
3 tablespoons of vegetable oil
24 small shrimp, peeled and deveined
1 large garlic clove, minced
1 cup of frozen peas, thawed out
1 scallion, trimmed, and cut thinly diagonally
1 tablespoon of ginger, grated
3 tablespoons of a curry powder of your choice, or more if you like it spicy
1 small onion, diced
Salt and pepper
2 teaspoons of asian fish sauce

Cook the onion in a large pan over medium high heat, until browned and soft.

Bring a large pot of water to a boil, and add the noodles. Cook until al dente. It should quick pretty fast!

When the noodles are done throw the shrimp in the water, and cook until pink.

Drain the noodles and add them into the pan, and add everything else, except the scallions, mixing everything in along the way.

When everything is warm and done cooking, throw in the scallions, and serve warm.


You can add pork to this, or top with cilantro.
