I know that many people love potato salad with mayonnaise, but I am here to tell you that potato salad is better without the mayo! This sounds crazy, but what makes it okay is the bacon. Here is the recipe:
German Potato Salad
Serves 10 -12 people
3 pounds of potatoes, half waxy red, and half yukon gold
1/4 cup of white vinegar
1 pound of bacon, cooked until crispy, and diced
1/3 cup of a light vegetable oil, to coat potatoes
Salt and pepper
3 scallions, sliced thinly
3 chives, sliced thinly
2 tablespoons of parsley, finely chopped
Boil the potatoes in a large pot of salted water until they are fork tender. Drain them and let them cool.
While the potatoes are cooling, cook the bacon until crispy, reserving the bacon fat for later.
Cut the potatoes into 1/2 inch thick cubes, and add them to a large bowl.
Add the vinegar, salt, pepper, scallions, chives, vegetable oil, chopped bacon, and the vegetable oil to the potatoes, tasting along the way, to adjust the salt, pepper, and vinegar.
Mix everything together, and serve! YUM
