It is the time of the year where everybody eats soup and sandwiches… I guess everybody always eats soup year round, but its best in the fall and winter.
Here is a great recipe:
Tomato Soup with Grilled Cheese
Serves 3-5
Tomato Soup:
3 tablespoons of olive oil
3 cups of yellow onion, chopped
1 tablespoon of garlic, minced
4 cups of chicken stock (low sodium)
1 (28ounce) can of crushed tomatoes
Salt and pepper
1/2 cup of heavy cream
Grilled Cheese:
3 pieces of thick ciabatta
1/2 pound of sliced gruyere
3-4 tablespoons of butter
For the tomato soup:
In a large pot, heat the olive oil over medium heat. Add the onions, and cook over medium low for 15 minutes, stirring occasionally until golden brown. Add the garlic, and cook for 1 minute more. Add the chicken stock, tomatoes, salt, pepper. Bring the soup to a boil, then lower the heat to a simmer for 15 minutes. Stir in the cream, return the soup to a simmer and cook for 10 minutes more, stirring frequently.
For the grilled cheese:
Heat a large saute pan over medium high heat, and melt the butter.
Put the cheese on the bread, and put it in the pan.
Cook until the cheeses all melty and gooey, and delicious.
Cut in half, and serve
Put the grilled cheese, and serve the tomato sauce in a bowl.
